Our Flour
MAKING LEVAIN BREAD
Our process starts with locally sourced organic whole-grain, unbleached flours, a ripe culture, water, and a 12-hour+ fermentation period. This begins the levain (sourdough) build. The levain is added to the final dough, which undergoes a bulk fermentation time of two or more hours. During this time, the dough is folded to increase gluten strength. In the following three hours, the dough is divided, shaped, proofed, and finally baked. Anyone who makes sourdough bread knows the process is a labour of love. But alas! One taste of the final product reinforces your commitment to the process. With a crisp crust, crumb, and deep flavor, this nutritious bread rewards every patient step.
